Mineral Springs School Peanut Butter Cookie Recipe

A few years ago, Helen Fields, longtime lunchroom supervisor at Mineral, provided the following recipe in response to a "Good Neighbors" request in The Birmingham News. According to Helen, this is a very old recipe that the lunchroom staff used for years to make "great cookies."

1 cup peanut butter
1 cup sugar
1 cup brown sugar
1 cup shortening
1 egg
1 teaspoon vanilla flavoring
2 cups all-purpose flour
1 teaspoon baking soda

Cream the first six ingredients together. Sift the flour and baking soda and add to the sugar mixture. Drop by round balls onto a cookie sheet. Press down with a fork in a crisscross pattern. Bake at 350° until cookies are light brown. Makes 4 dozen.
